Ingredients

  • 4 pieces Tilapia fillets
  • 2 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Chili powder
  • 0.5 teaspoons Garlic powder
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 4 medium Tomatillos (chopped)
  • 1 cup Black beans (drained and rinsed)
  • 1 large Mango (cubed)
  • 0.25 cup Red onion (finely chopped)
  • 2 tablespoons Cilantro (chopped)
  • 1 small Jalapeño (minced, optional)
  • 1 large Lime (juiced)
  • 0.25 teaspoons Salt (for salad)
  • 0.25 teaspoons Black pepper (for salad)

Directions

Step 1

Preheat a large skillet over medium heat and drizzle with 1 tablespoon of olive oil.

Step 2

In a small bowl, combine cumin, paprika, chili powder, garlic powder, salt, and black pepper. Pat the tilapia fillets dry with paper towels, then rub the spice mixture evenly onto both sides of each fillet.

Step 3

Once the skillet is hot, add the tilapia fillets and cook for 3-4 minutes per side, or until the fish is opaque and flakes easily with a fork. Remove from the skillet and keep warm.

Step 4

In a large mixing bowl, combine the chopped tomatillos, black beans, cubed mango, red onion, cilantro, and jalapeño (if using).

Step 5

Squeeze the lime juice over the salad and season with 1/4 teaspoon of salt and black pepper. Toss gently to combine.

Step 6

Divide the tomatillo, black bean, and mango salad among four plates and top each with a tilapia fillet.

Step 7

Serve immediately and enjoy this vibrant, spice-forward meal!
