Ingredients

  • 4 pieces salmon fillets
  • 3 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon brown sugar
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 8 cups baby spinach
  • 2 tablespoons lemon juice
  • 3 cloves garlic cloves, minced
  • 0.25 teaspoon red pepper flakes

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

In a small bowl, mix together the paprika, ground cumin, garlic powder, brown sugar, salt, and black pepper to create the spice rub.

Step 3

Pat the salmon fillets dry with a paper towel and brush each fillet with 1 tablespoon of olive oil. Generously coat the top of each fillet with the spice rub, pressing it lightly to help it adhere.

Step 4

Place the salmon fillets on the prepared baking sheet, skin side down. Roast in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Step 5

While the salmon is roasting, heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat.

Step 6

Add the minced garlic to the skillet and sauté for 1-2 minutes, or until fragrant but not browned.

Step 7

Add the baby spinach to the skillet, a handful at a time, stirring frequently until wilted. This should take about 3-4 minutes.

Step 8

Stir in the lemon juice and red pepper flakes, and cook for an additional 1-2 minutes. Season with salt to taste, if desired.

Step 9

To serve, divide the spinach among four plates and place a roasted salmon fillet on top of each. Enjoy immediately.
