Ingredients

  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 1 cup Brown sugar, packed
  • 2 teaspoons Baking soda
  • 1.5 teaspoons Ground cinnamon
  • 0.5 teaspoons Ground nutmeg
  • 0.25 teaspoons Ground cloves
  • 0.5 teaspoons Salt
  • 1 cup Mayonnaise
  • 1 cup Water, room temperature
  • 1.5 teaspoons Vanilla extract
  • 0.5 cup Raisins or chopped nuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan, or line it with parchment paper.

Step 2

In a large mixing bowl, combine the all-purpose flour, granulated sugar, brown sugar, baking soda, ground cinnamon, ground nutmeg, ground cloves, and salt. Whisk everything together until well blended.

Step 3

Add the mayonnaise, water, and vanilla extract to the dry ingredients. Stir gently using a rubber spatula or wooden spoon until the batter is smooth and uniform. Be careful not to overmix.

Step 4

If using raisins or chopped nuts, fold them into the batter at this stage.

Step 5

Pour the batter into the prepared baking pan, spreading it out evenly with a spatula.

Step 6

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Step 7

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer the cake to a wire rack to cool completely.

Step 8

Once cooled, the cake can be served as is or topped with a frosting of your choice, such as cream cheese or vanilla glaze.
