Ingredients

  • 113 grams unsalted butter
  • 150 grams brown sugar
  • 50 grams granulated sugar
  • 2 large eggs
  • 60 ml molasses
  • 5 ml vanilla extract
  • 200 grams all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 50 grams chopped nuts (optional, such as walnuts or pecans)
  • 50 grams raisins (optional)
  • 10 grams powdered sugar (for garnish, optional)

Directions

Step 1

Preheat your oven to 175°C (350°F). Lightly grease or line a 9x13-inch (23x33 cm) baking dish with parchment paper.

Step 2

In a medium saucepan over low heat, melt the butter. Once melted, remove from heat and stir in the brown sugar and granulated sugar until smooth and well combined.

Step 3

Allow the butter and sugar mixture to cool slightly, then whisk in the eggs, molasses, and vanilla extract until smooth.

Step 4

In a separate mixing bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.

Step 5

Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix the batter.

Step 6

If desired, fold in the chopped nuts and raisins for added texture and flavor.

Step 7

Pour the batter into the prepared baking dish and spread it evenly with a spatula.

Step 8

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

Step 9

Remove the baking dish from the oven and let the spice bars cool completely in the pan on a wire rack.

Step 10

Once cooled, dust the top with powdered sugar (if using) and cut into bars or squares of your desired size.

Step 11

Serve and enjoy your soft, spiced treats with a cup of tea, coffee, or as a dessert!
