  • 1 cup spelt
  • 3 cups water
  • 1 whole English cucumber
  • 1.5 cups cherry tomatoes

  • 0.5 cup feta cheese

  • 2 tablespoons lemon juice
  • 3 tablespoons olive oil
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse the spelt under cold water and combine it with 3 cups of water in a medium saucepan. Bring to a boil over high heat, then reduce heat to low, cover, and simmer for 25-30 minutes or until the grains are tender but still chewy.

Once cooked, drain any excess water from the spelt and set it aside to cool to room temperature.
