  • 1 cup spelt berries
  • 1 cup kamut berries
  • 6 cups water
  • 1 medium cucumber
  • 1.5 cups cherry tomatoes

  • 0.5 cup parsley
  • 0.25 cup mint leaves
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 0.5 cup feta cheese (optional)

Directions

Step 1

Rinse the spelt and kamut berries under cold water to remove any debris.

Step 2

In a large pot, bring 6 cups of water to a boil. Add the spelt and kamut berries, then reduce the heat to a simmer. Cover and cook for 40-50 minutes or until the grains are tender but still chewy.
