Ingredients

  • 500 grams Unsalted butter (softened)
  • 350 grams Powdered sugar
  • 10 large Egg yolks
  • 4 large Egg whites
  • 150 grams All-purpose flour
  • 100 milliliters Sweetened condensed milk
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground cloves
  • 1 teaspoon Ground nutmeg
  • 0.5 teaspoon Ground cardamom
  • 0.5 teaspoon Ground aniseed
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Salt

Directions

Step 1

Preheat the oven to 180°C (356°F) and prepare an 8-inch square or round cake pan by lining it with parchment paper. Set aside.

Step 2

In a large bowl, beat the softened butter and powdered sugar together until pale, light, and fluffy, about 3-5 minutes.

Step 3

Add the egg yolks one at a time to the butter mixture, beating well after each addition. Mix in the vanilla extract and sweetened condensed milk until combined.

Step 4

In a separate clean bowl, whisk the egg whites and salt to stiff peaks using an electric hand mixer.

Step 5

Gently fold the whipped egg whites into the butter and yolk mixture in batches, being careful not to deflate the mixture.

Step 6

Sift the flour into the batter and fold gently until just combined.

Step 7

Divide the batter equally into two bowls. In one bowl, mix in the ground cinnamon, cloves, nutmeg, cardamom, and aniseed to make the spiced layer batter. Leave the second bowl plain for the unspiced layers.

Step 8

Set the oven to broil/grill mode. Pour a thin layer of plain batter (about 2-3 tablespoons) into the prepared cake pan. Spread it evenly and bake under the broiler for 5-7 minutes, or until golden brown.

Step 9

Remove from the oven. Spread a layer of spiced batter over the cooked layer and bake under the broiler for another 5-7 minutes, or until golden brown.

Step 10

Continue layering the plain and spiced batters alternately, baking each layer under the broiler until golden brown. This process will create the signature layered effect.

Step 11

Once all the batter is used, and the final layer is baked, reduce the oven temperature to 160°C (320°F) and bake the cake for an additional 10-15 minutes to ensure it is fully cooked through.

Step 12

Allow the cake to cool completely in the pan before removing and slicing into desired servings.

Step 13

Spekkoek can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
