Ingredients

  • 250 g pasta (spaghetti, penne, or your choice)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 400 g crushed tomatoes (canned)
  • 1 tbsp tomato paste
  • 1 tsp dried Italian herbs (basil, oregano, thyme)
  • 0.5 tsp red chili flakes (optional)
  • 0.5 tsp salt
  • 0.25 tsp black pepper, freshly ground
  • 100 g fresh spinach leaves
  • 2 tbsp Parmesan cheese, grated (optional)
  • 6 leaves fresh basil leaves (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil.

Step 2

Add the pasta and cook as per the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

In a large skillet, heat the olive oil over medium heat.

Add the minced garlic and sauté for 30 seconds until fragrant.

Stir in the crushed tomatoes, tomato paste, dried Italian herbs, red chili flakes (if using), salt, and black pepper. Let the sauce simmer for 5 minutes, stirring occasionally.

Lower the heat and toss the cooked pasta into the tomato-spinach mixture to coat evenly. If the sauce is too thick, add a splash of the reserved pasta water to reach the desired consistency.
