Ingredients

  • 2 15-ounce cans canned pinto beans
  • 2 tablespoons olive oil

  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup vegetable broth
  • 1 tablespoon lime juice
  • 2 tablespoons, finely chopped (optional) fresh cilantro

Directions

Step 1

Drain and rinse the canned pinto beans thoroughly under cold water and set them aside.

In a large skillet, heat the olive oil over medium heat.

Add the finely chopped onion to the skillet and sauté for 3–4 minutes, or until softened and translucent.

Stir in the minced garlic and cook for 1 more minute, or until fragrant.
