Ingredients

  • 1 cup Basmati rice
  • 1.5 cups Water
  • 2 cups Fresh spinach
  • 0.5 cup Fresh cilantro
  • 0.5 cup Fresh parsley
  • 1 whole Jalapeño
  • 1 whole Garlic clove
  • 2 tablespoons Lime juice
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground cumin

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear. This removes excess starch and prevents clumping.

Step 2

In a medium saucepan, add the rinsed rice and 1.5 cups of water. Bring to a boil, then reduce the heat to low, cover, and let it simmer for 12-15 minutes, or until the water is absorbed and the rice is tender.

While the rice cooks, prepare the green sauce. In a blender or food processor, combine spinach, cilantro, parsley, jalapeño (seeded for less heat, if desired), garlic, lime juice, olive oil, salt, and ground cumin.
