Ingredients

  • 1 lb Boneless, skinless chicken breast
  • 2 tbsp Cornstarch
  • 3 tbsp Soy sauce
  • 2 tbsp Hoisin sauce
  • 1 tbsp Rice vinegar
  • 2 tsp Sesame oil
  • 2 Garlic cloves, minced
  • 1 tsp Ginger, grated
  • 1 Green bell pepper, sliced
  • 1 Red bell pepper, sliced
  • 1 Carrot, julienned
  • 2 Green onions, chopped
  • 2 tbsp Vegetable oil
  • 2 tbsp Water
  • 1 tsp Sugar
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Cut the chicken breast into thin strips and place them in a bowl. Add 1 tablespoon of soy sauce and 1 tablespoon of cornstarch to the chicken, mixing well to coat. Let it marinate while preparing the other ingredients.

Step 2

In a small bowl, mix together the remaining 2 tablespoons of soy sauce, hoisin sauce, rice vinegar, sesame oil, water, sugar, and a pinch of salt and pepper to create the sauce. Set aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the chicken in a single layer and cook for 4-5 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 4

Add the remaining tablespoon of vegetable oil to the skillet. Toss in the minced garlic and grated ginger, stirring for 30 seconds until fragrant.

Step 5

Add the green bell pepper, red bell pepper, and carrot to the skillet. Stir fry for 3-4 minutes, or until the vegetables are tender-crisp.

Step 6

Return the cooked chicken to the skillet and pour in the prepared sauce. Stir everything together and cook for another 2-3 minutes, allowing the sauce to thicken slightly and coat the ingredients evenly.

Step 7

Remove the skillet from heat and sprinkle the chopped green onions over the dish.
