Ingredients

  • 2 cups Cooked rotisserie chicken, shredded
  • 4 oz Cream cheese, softened

  • 1 tsp Cumin
  • 1 tsp Chili powder
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 cup Shredded cheese (cheddar or Mexican blend)
  • 2 pieces Refrigerated pie crusts (store-bought)
  • 1 large Egg, beaten
  • 2 tbsp Flour (for dusting)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a mixing bowl, combine the shredded rotisserie chicken, softened cream cheese, tomato salsa, cumin, chili powder, salt, black pepper, and shredded cheese. Mix until well incorporated.

Lightly flour your work surface and roll out each pie crust. Use a 4-inch round cutter or the rim of a large glass to cut out circles from the dough. Gather and re-roll scraps as needed to make more circles.
