Ingredients

  • 2 pieces chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 250 grams button mushrooms
  • 1 medium onion
  • 2 pieces garlic cloves
  • 1 cup chicken stock
  • 0.5 cup heavy cream
  • 2 tablespoons fresh parsley
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Pound the chicken breasts to an even thickness and season both sides with salt and black pepper.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken and set it aside.

Step 3

Add the remaining 1 tablespoon of olive oil and butter to the same skillet. Once melted, add the sliced mushrooms and cook for 4 minutes, stirring occasionally, until softened and golden.
