Ingredients

  • 240 grams all-purpose flour
  • 150 grams unsalted butter (cold, cubed)
  • 150 grams light brown sugar
  • 1 tablespoon milk
  • 2 tablespoons speculaas spice mix (see Note below for homemade blend)
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt

Directions

Step 1

In a large mixing bowl, whisk together the all-purpose flour, speculaas spice mix, baking powder, and salt.

Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, rub the butter into the dry ingredients until the mixture resembles coarse crumbs.

Stir in the brown sugar until evenly incorporated.

Add the milk and knead the dough gently until it comes together. Be careful not to overmix.
