Ingredients

  • 250 grams all-purpose flour

  • 150 grams unsalted butter, chilled and cubed

  • 15 grams speculaas spices (cinnamon, ginger, cloves, nutmeg, cardamom, white pepper)
  • 5 grams baking powder
  • 1 pinch salt
  • 50 grams sliced almonds (optional)

Directions

Step 1

Begin by combining the all-purpose flour, dark brown sugar, speculaas spices, baking powder, and salt in a large mixing bowl.

Step 2

Add the chilled and cubed unsalted butter to the dry ingredients. Use a pastry cutter or your fingers to rub the butter into the flour mixture until it resembles coarse crumbs.

Step 3

Pour in the milk and stir it in until the dough comes together. If the dough is too dry, add a little more milk, 1 teaspoon at a time.

Turn the dough out onto a lightly floured surface and knead gently until smooth. Shape it into a flat disc, wrap it in plastic wrap, and refrigerate for at least 1 hour to allow the flavors to develop.
