2. In a medium saucepan, combine the heavy cream, whole milk, half of the granulated sugar (3/8 cup), the vanilla bean seeds, and the pod. Heat the mixture over medium heat until it just begins to steam and small bubbles form, but do not let it boil. Remove from heat and let it steep for 10 minutes.
3. While the cream mixture steeps, whisk together the egg yolks, the remaining 3/8 cup of granulated sugar, and salt in a medium bowl until the mixture is pale and creamy.
