Ingredients

  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 6 cups yellow onions, thinly sliced
  • 1 teaspoon granulated sugar
  • 2 cloves garlic, minced
  • 1.5 cups dry white wine
  • 8 cups beef stock
  • 1 bay leaf
  • 3 fresh thyme sprigs
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper, freshly ground
  • 8 baguette slices
  • 2 cups Gruyère cheese, shredded
  • 0.5 cups Parmesan cheese, grated

Directions

Step 1

In a large, heavy-bottomed pot or Dutch oven, melt the butter with the olive oil over medium heat.

Step 2

Add the sliced onions to the pot and stir to coat them in the butter and oil. Cook for 10 minutes, stirring occasionally, until the onions begin to soften.

Step 3

Sprinkle the sugar over the onions and continue cooking for another 25-30 minutes, stirring often, until the onions turn a deep golden brown and caramelized.

Step 4

Add the minced garlic and cook for 1 minute, stirring constantly, until fragrant.

Step 5

Deglaze the pot by adding the white wine. Scrape the bottom of the pot to release any browned bits. Simmer for 5 minutes to reduce the wine slightly.

Step 6

Add the beef stock, bay leaf, and thyme sprigs. Stir to combine, then bring the soup to a simmer. Cook uncovered for 25 minutes.

Step 7

Remove the bay leaf and thyme sprigs. Season the soup with salt and black pepper, adjusting to taste.

Step 8

While the soup is simmering, prepare the baguette toasts. Preheat your oven broiler. Arrange the baguette slices on a baking sheet and toast them under the broiler for 1-2 minutes per side, or until lightly golden.

Step 9

Ladle the soup into oven-safe bowls. Place a toasted baguette slice (or two) on top of each bowl of soup.

Step 10

Sprinkle the shredded Gruyère cheese and grated Parmesan over the bread in each bowl.

Step 11

Place the bowls on a baking sheet and broil in the oven for 2-3 minutes, or until the cheese is melted, bubbly, and golden brown. Keep a close eye to prevent burning.

Step 12

Carefully remove the bowls from the oven and let them cool for a few minutes. Serve the soup hot and enjoy your Spectacular French Onion Soup!
