  • 1 tablespoon fish sauce
  • 1 tablespoon palm sugar (or brown sugar)
  • 1 tablespoon lime juice
  • 2 stalks (finely chopped) green onion
  • 2 tablespoons (chopped) fresh cilantro
  • 2 tablespoons (chopped, for garnish) roasted peanuts

Directions

Step 1

Heat a large skillet or wok over medium heat and add coconut oil.

Step 2

Once the oil is hot, add the minced garlic, grated ginger, and chopped red chili. Sauté for 1-2 minutes until fragrant.

Add the diced pineapple to the pan and cook for about 5-7 minutes, stirring occasionally, until the pineapple is lightly caramelized.
