Directions

Step 1

Remove the steak from the refrigerator 30 minutes before cooking to bring it to room temperature. Pat it dry with a paper towel.

Season the steak generously with salt, black pepper, and paprika on both sides.

Heat 1 tablespoon of olive oil in a heavy skillet (preferably cast iron) over medium-high heat until shimmering.
