Ingredients

  • 500 grams Shrimp (peeled, deveined, medium-sized)
  • 3 cups Cooked white rice
  • 4 tablespoons Butter
  • 3 tablespoons All-purpose flour
  • 2 cups Milk
  • 2 cups Cheddar cheese (shredded)
  • 0.5 cups Parmesan cheese (grated)
  • 1 cup Frozen peas and carrots
  • 1 medium Onion (chopped)
  • 2 cloves Garlic (minced)
  • 1 cup Chicken broth
  • 0.5 teaspoons Paprika
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 1 cup Breadcrumbs
  • 1 tablespoon Olive oil
  • 2 tablespoons Parsley (chopped, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish lightly with butter or non-stick spray.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute.

Step 3

Add the shrimp to the skillet and season with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper. Cook for 2-3 minutes, or until the shrimp are just pink. Transfer the shrimp to a plate and set aside.

Step 4

In the same skillet, melt 4 tablespoons of butter over medium heat. Whisk in the all-purpose flour and cook for 1-2 minutes, stirring constantly. Gradually whisk in the milk and chicken broth, stirring until the mixture thickens and becomes smooth.

Step 5

Add 1 1/2 cups of shredded cheddar cheese, 1/4 cup of grated Parmesan cheese, 1/2 teaspoon of paprika, and the remaining salt and black pepper. Stir until the cheese is melted and the sauce is creamy. Remove from heat.

Step 6

In a large mixing bowl, combine the cooked rice, frozen peas and carrots, cooked shrimp, and the cheese sauce. Mix thoroughly to ensure all ingredients are evenly coated.

Step 7

Transfer the mixture to the prepared baking dish. Sprinkle the top with the remaining cheddar cheese, Parmesan cheese, and breadcrumbs for a crispy topping.

Step 8

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is bubbling around the edges.

Step 9

Remove the casserole from the oven and let it rest for 5 minutes before serving. Garnish with chopped parsley for a fresh touch.

Step 10

Serve warm and enjoy your Special Shrimp Casserole!
