  • 200 milliliters heavy cream
  • 3 large eggs
  • 100 grams cheddar cheese (grated)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon thyme leaves (fresh)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour and a pinch of salt. Add the cold, cubed butter and use a pastry cutter or your fingertips to rub the butter into the flour until the mixture resembles breadcrumbs.

Step 2

Slowly add in the ice-cold water, one tablespoon at a time, mixing gently until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
