Ingredients

  • 6 cups Special K cereal
  • 1 cup light corn syrup
  • 1 cup granulated sugar
  • 1.5 cups creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1 for preparation cooking spray or parchment paper

Directions

Step 1

Prepare a 9x13-inch baking dish by lightly spraying it with cooking spray or lining it with parchment paper. Set aside.

Step 2

In a large saucepan over medium heat, combine the light corn syrup and granulated sugar.

Step 3

Stir constantly until the sugar dissolves and the mixture begins to bubble gently. Do not let it boil vigorously to avoid over-cooking.

Step 4

Remove the saucepan from heat and quickly stir in the creamy peanut butter until the mixture is smooth and fully combined.

Step 5

Add the vanilla extract and stir to distribute evenly.

Step 6

In a large mixing bowl, pour the peanut butter mixture over the Special K cereal.

Step 7

Gently fold the cereal and peanut butter mixture together using a spatula until the cereal is well-coated.

Step 8

Transfer the mixture into the prepared 9x13-inch dish and press it down evenly using the back of a spatula or clean hands. Be careful not to press too hard, as this could make the treats too dense.

Step 9

Let the treats cool to room temperature for 25–30 minutes or until firm and set.

Step 10

Once cooled and set, cut into squares or bars and serve immediately. Store leftovers in an airtight container at room temperature for up to one week.
