  • 1.5 cups Heavy cream

  • 1.5 cups Gruyere cheese
  • 0.5 cups Parmesan cheese
  • 1 tablespoon Fresh thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with olive oil and set aside.

Step 2

Peel the potatoes and slice them uniformly into thin rounds, about 1/8 inch thick. Use a mandoline for even slices if available.

Step 3

In a small saucepan over medium heat, melt the butter. Add minced garlic and sauté for 1–2 minutes until fragrant. Gradually whisk in the heavy cream, salt, pepper, and fresh thyme. Heat until warmed through but do not boil. Remove from heat.

Step 4

Layer one-third of the potato slices in the prepared baking dish, overlapping the slices slightly. Pour one-third of the cream mixture over the potatoes and sprinkle one-third of the Gruyere and Parmesan cheeses.

Step 5

Repeat the layers twice more with the remaining potatoes, cream mixture, and cheeses.

Step 6

Cover the dish tightly with aluminum foil and bake in the preheated oven for 40 minutes.

Remove the foil and continue baking for an additional 20–25 minutes, or until the top is golden brown and bubbly and the potatoes are fork-tender.
