Ingredients

  • 3 cups Whole milk
  • 1 cup Heavy cream
  • 1 piece Cinnamon stick

  • 1 teaspoons Vanilla extract
  • 6 pieces Large eggs
  • 0.75 cups Granulated sugar
  • 0.5 cups Rum or bourbon (optional)
  • 0.25 teaspoons Ground cinnamon (for garnish)
  • 1 cup Whipped cream (optional, for topping)

Directions

Step 1

In a medium saucepan, combine the whole milk, heavy cream, cinnamon stick, and nutmeg. Heat gently on medium-low, stirring occasionally, until the mixture is warm (do not let it boil). Once warm, remove from heat and set aside to infuse for 10 minutes.

Step 2

In a large mixing bowl, whisk the egg yolks and sugar together until the mixture is pale and creamy.

Step 3

Gradually pour a small amount of the warm milk mixture into the egg yolk mixture, whisking constantly to temper the eggs. Slowly add the rest of the milk mixture while continuing to whisk.

Step 4

Transfer the mixture back to the saucepan and return to medium heat. Cook, stirring constantly with a wooden spoon, until the mixture reaches 160°F (71°C) and thickens slightly. This should take about 5-7 minutes.

Step 5

Remove the mixture from the heat and stir in the vanilla extract and rum or bourbon (if using). Pour the eggnog through a fine-mesh sieve to remove any clumps, then transfer it to a bowl or pitcher.

Step 6

Cover and refrigerate for at least 2 hours, or until thoroughly chilled.

Step 7

Before serving, give the eggnog a gentle stir. Pour into glasses, sprinkle ground cinnamon on top, and optionally garnish with a dollop of whipped cream.
