  • 4 large Eggs
  • 1/2 cup Whole milk

Directions

Step 1

In a large mixing bowl, whisk together the flour, salt, and freshly ground nutmeg if using.

Create a well in the center of the dry ingredients and add the eggs and milk.

Using a wooden spoon or spatula, stir the mixture until it forms a thick and sticky dough. It should be slightly elastic but not fully smooth.

Bring a large pot of salted water to a boil.

If you have a Spätzle maker, press the dough through the holes directly into the boiling water. If you don't have a Spätzle maker, use the back of a spoon or a flat tool to push small pieces of dough through the holes of a colander or box grater.

Let the Spätzle cook in the boiling water until they float to the surface, which should take about 2-3 minutes. Once they float, use a slotted spoon to transfer them to a bowl of ice water to stop the cooking process.

Drain the cooked Spätzle from the ice water and pat them dry with a clean dish towel.
