  • 200 grams fresh raspberries
  • 100 grams granulated sugar
  • 4 sheets gelatin sheets
  • 500 milliliters sparkling water
  • 1 tablespoon lemon juice
  • 5 leaves fresh mint leaves (optional, for garnish)

Directions

Step 1

Place the gelatin sheets in a bowl of cold water and let them soften for 5 minutes.

Step 2

In a small saucepan, combine raspberries, granulated sugar, and lemon juice. Cook over medium heat for 5-7 minutes until the raspberries break down into a sauce-like consistency.

Step 3

Remove the saucepan from heat and strain the raspberry mixture through a fine-mesh sieve to remove seeds, pressing down with a spoon to extract as much liquid as possible. Discard the seeds.

Step 4

Heat the strained raspberry liquid gently over low heat. Squeeze excess water from the softened gelatin sheets and add them to the saucepan. Stir until the gelatin is completely dissolved.

Step 5

Remove the saucepan from heat and let the mixture cool for about 10 minutes. Once slightly cooled, slowly stir in the sparkling water, taking care not to lose too much of the carbonation.

Step 6

Pour the mixture evenly into a prepared rectangular or square dish (approximately 8x8 inches for thicker jellies or a larger dish for thinner ones). Cover and refrigerate for 4-6 hours, or until fully set.
