Ingredients

  • 500 grams white asparagus
  • 1 liter water
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 125 grams unsalted butter
  • 2 large egg yolks
  • 1 tablespoon lemon juice
  • 0.5 teaspoon Dijon mustard
  • 0.25 teaspoon salt (for Hollandaise sauce)
  • 1 pinch cayenne pepper

Directions

Step 1

Peel the white asparagus from just below the tips to the base using a vegetable peeler and trim the woody ends.

Step 2

Add 1 liter of water to a large pot and bring to a boil. Add 1 teaspoon of salt and 1 teaspoon of sugar.

Step 3

Add the peeled asparagus to the boiling water, reduce the heat to a simmer, and cook for 8-10 minutes or until tender but still slightly firm. Drain the asparagus and set aside.

To make the Hollandaise sauce, melt the butter in a small saucepan over low heat. Set aside and let it cool slightly.
