Ingredients

  • 2 pounds Pork spareribs
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 2 tablespoons Olive oil
  • 1 cup Water
  • 1.5 cups Barbecue sauce
  • 2 tablespoons Brown sugar
  • 1 tablespoon Apple cider vinegar
  • 0.5 teaspoon Liquid smoke (optional)

Directions

Step 1

Begin by preparing the spareribs. Using a sharp knife, remove the thin membrane from the back of the ribs and trim any excess fat. Cut the ribs into 3-4 rib portions for easier handling.

Step 2

In a small bowl, mix together the salt, black pepper, paprika, garlic powder, and onion powder.

Step 3

Rub the spice mixture generously onto both sides of the ribs to coat them evenly.

Step 4

Set your pressure cooker to 'Sauté' mode and add the olive oil. Allow it to heat up for 1-2 minutes.

Step 5

Working in batches if necessary, brown the ribs on all sides in the pressure cooker to develop a flavorful crust, about 2 minutes per side. Set the browned ribs aside on a plate.

Step 6

Turn off the 'Sauté' mode and pour 1 cup of water into the pressure cooker to deglaze the bottom. Use a wooden spoon to scrape up any browned bits stuck to the pot, as these hold extra flavor.

Step 7

Place a steaming rack or trivet into the pressure cooker and arrange the ribs on top of it. This will keep them out of the liquid during cooking.

Step 8

Secure the lid of the pressure cooker and set the valve to 'Sealing.' Cook on high pressure for 25 minutes.

Step 9

While the ribs are cooking, prepare the barbecue sauce. In a small saucepan over medium heat, combine the barbecue sauce, brown sugar, apple cider vinegar, and liquid smoke (if using). Stir well and simmer for 5 minutes, then remove from heat.

Step 10

When the ribs have finished cooking, allow the pressure to release naturally for 10-15 minutes, then carefully switch the valve to 'Venting' to release any remaining pressure.

Step 11

Using tongs, remove the ribs from the pressure cooker and place them on a baking sheet lined with foil.

Step 12

Preheat your oven’s broiler to high. Generously brush the ribs with the prepared barbecue sauce, coating them evenly.

Step 13

Broil the ribs for 5-7 minutes, or until the barbecue sauce becomes caramelized and sticky. Keep a close eye on them to prevent burning.

Step 14

Remove the ribs from the oven, let them rest for 5 minutes, and serve warm with extra barbecue sauce on the side.
