  • 1 kg Pork spareribs
  • 2 tablespoons Fermented black beans
  • 4 Garlic cloves
  • 1 thumb-sized piece Ginger

  • 2 tablespoons Shaoxing wine (or dry sherry)
  • 1 tablespoon Cornstarch
  • 1 teaspoon Sugar
  • 1 teaspoon Sesame oil
  • 2 tablespoons Vegetable oil
  • 2 Scallions (green onions)
  • 200 ml Water
  • 0.5 teaspoon Salt
  • 0.25 teaspoon White pepper

Directions

Step 1

Prepare the spareribs by cutting them into 2-3 inch bite-sized pieces, if not already done. Rinse the spareribs thoroughly under cold water and pat them dry with paper towels.

Step 2

In a bowl, marinate the spareribs with 1 tablespoon of soy sauce, 1 tablespoon of Shaoxing wine, and 1/2 teaspoon of salt. Let them sit for at least 15 minutes.

Meanwhile, rinse the fermented black beans under running water to remove excess salt and chop them finely. Mince the garlic and ginger, and chop the scallions into small pieces. Set these aside.

In a small bowl, mix the remaining soy sauce, Shaoxing wine, cornstarch, sugar, sesame oil, and white pepper with water to create the sauce mixture. Stir well and set aside.
