Ingredients

  • 3 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 16 ounces fresh spinach, roughly chopped
  • 1 cup long-grain white rice
  • 2 cups vegetable broth
  • 2 tablespoons dill, fresh and chopped
  • 2 tablespoons parsley, fresh and chopped
  • 2 tablespoons lemon juice
  • 1 cup feta cheese, crumbled
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x9-inch casserole dish and set it aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for 3-4 minutes until softened and translucent.

Step 3

Add the minced garlic to the skillet and sauté for an additional 1 minute until fragrant.

Step 4

Stir in the chopped spinach and cook for 4-5 minutes until wilted. Remove from heat.

Rinse the rice under cold water to remove excess starch and drain well.

In a large mixing bowl, combine the cooked spinach mixture, rinsed rice, vegetable broth, dill, parsley, lemon juice, salt, and black pepper. Mix until well combined.
