Ingredients

  • 400 g canned white beans (e.g., cannellini or great northern)
  • 6 eggs
  • 4 tbsp olive oil
  • 1 medium yellow onion, finely diced
  • 2 garlic cloves, minced
  • 1 small red bell pepper, diced
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 2 red chilies, chopped
  • 2 tbsp white wine vinegar
  • 1 tsp smoked paprika
  • 1 tsp honey
  • 2 tbsp water
  • 1 tbsp lemon juice

Directions

Step 1

Drain and rinse the canned white beans. Set them aside to dry slightly.

Step 2

In a large mixing bowl, crack the eggs and whisk them together with a pinch of salt and pepper.

Heat 2 tablespoons of olive oil in a large non-stick frying pan over medium heat. Add the diced onion and cook for 5 minutes until softened.

Add the minced garlic and red bell pepper to the pan. Cook for another 3 minutes until the vegetables are tender.

Stir in the drained white beans, paprika, 1 teaspoon of salt, and 0.5 teaspoon of black pepper. Cook for 2 minutes, stirring gently to avoid breaking the beans.
