Ingredients

  • 6 large ripe tomatoes
  • 2 tablespoons olive oil
  • 1 medium onion
  • 3 cloves garlic

  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Wash and core the tomatoes. Make a small 'X' incision at the bottom of each tomato.

Bring a pot of water to a boil and blanch the tomatoes for 30 seconds. Immediately transfer them to an ice bath to cool. Peel off the skins, dice the tomatoes, and set them aside.

Peel and finely chop the onion and garlic cloves.
