  • 1 pre-made or homemade (9-inch) pie crust
  • 4 large ripe tomatoes
  • 1 medium, thinly sliced yellow onion

  • 3 minced garlic cloves
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup grated Manchego cheese
  • 0.5 cup mayonnaise
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Place the pie crust into a 9-inch pie dish, pressing it gently into the bottom and sides. Trim any excess overhang and prick the bottom with a fork. Blind bake the crust for 10 minutes, then set aside to cool.

Slice the tomatoes into 1/4-inch rounds and place them on a paper towel-lined tray. Sprinkle both sides of the slices with salt to draw out excess moisture. Let them rest for 10 minutes, then blot them dry with paper towels.
