Ingredients

  • 500 g Waxy potatoes
  • 3 tbsp Olive oil
  • 1 tsp Salt
  • 2 units Garlic cloves
  • 1 unit Egg yolk
  • 1 tbsp Lemon juice
  • 1 tsp Dijon mustard
  • 100 ml Vegetable oil
  • 1 tbsp Fresh parsley (optional, for garnish)

Directions

Step 1

Peel the potatoes and cut them into bite-sized cubes, about 2 cm wide.

Step 2

Place the potatoes in a pot and cover with water. Add a pinch of salt and bring to a boil. Cook for 10 minutes until the potatoes are fork-tender but not falling apart. Drain well and let them cool slightly.

Heat 3 tablespoons of olive oil in a large frying pan over medium-high heat. Add the boiled potatoes and season with 1 teaspoon of salt.
