  • 1 teaspoon sugar
  • 2 teaspoons salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Wash the baby potatoes thoroughly and cut them into bite-sized chunks, leaving the skin on for extra texture and flavor.

Step 2

Place the potatoes in a large pot of salted water and bring to a boil. Cook for 10 minutes or until just tender. Drain and set aside.

Step 3

Heat 2 tablespoons of olive oil in a large frying pan over medium-high heat. Add the cooked potatoes and fry for 10-12 minutes, turning occasionally, until golden and crispy. Remove from heat and set aside.
