Ingredients

  • 2 pieces ripe avocados
  • 2 tablespoons lime juice
  • 1 tablespoon extra virgin olive oil
  • 1 piece garlic clove
  • 1 teaspoon sea salt
  • 12 pieces raw shrimp (peeled and deveined)
  • 1 teaspoon paprika
  • 0.25 teaspoons ground cayenne pepper
  • 1 tablespoon fresh parsley (chopped)
  • 12 pieces toothpicks or small skewers

Directions

Step 1

Cut the avocados in half, remove the pits, and scoop the flesh into a bowl.

Step 2

Add lime juice, olive oil, minced garlic, and sea salt to the avocado flesh. Mash with a fork until smooth or blend in a food processor for a creamier texture.

Step 3

Cover the avocado puree and set it aside in the refrigerator while you prepare the shrimp.

Step 4

Season the peeled and deveined shrimp with paprika, cayenne pepper, and a pinch of salt. Toss to ensure even coating.

Step 5

Heat a non-stick skillet over medium-high heat. Lightly drizzle with olive oil if needed.

Step 6

Cook the shrimp for 2–3 minutes per side until they turn pink and are fully cooked but still tender. Avoid overcooking.

Step 7

Remove the shrimp from the pan and allow them to cool slightly.

Step 8

To assemble, spoon a dollop of avocado puree onto a small plate or tapas dish.

Step 9

Thread one cooked shrimp onto a toothpick or small skewer and place it on top of the avocado puree.

Step 10

Garnish with chopped parsley and serve immediately or slightly chilled.
