Ingredients

  • 4 pieces steak or chicken (bone-in thighs or breasts)
  • 3 tablespoons olive oil
  • 1 large onion, finely chopped
  • 1 large red bell pepper, sliced
  • 3 garlic cloves, minced
  • 1 teaspoon paprika
  • 0.5 teaspoon smoked paprika (optional)
  • 1 teaspoon dried oregano
  • 14 ounces canned chopped tomatoes
  • 1 cup chicken or beef stock
  • 0.5 cup pitted green olives
  • 2 tablespoons fresh parsley, chopped
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Season the steak or chicken pieces generously with salt and black pepper on both sides.

Step 2

Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat.

Step 3

Sear the steak or chicken pieces for 2-3 minutes per side until golden brown. Remove them from the pan and set aside.

Step 4

In the same pan, add the chopped onion and sauté for 3-4 minutes until softened.

Step 5

Add the sliced red bell pepper and cook for another 2 minutes, then stir in the minced garlic and cook for 1 minute until fragrant.

Step 6

Sprinkle the paprika, smoked paprika (if using), and dried oregano over the vegetables. Stir well to coat.

Step 7

Pour in the canned chopped tomatoes and chicken or beef stock. Stir to combine, scraping the bottom of the pan to release any browned bits.

Step 8

Return the seared steak or chicken to the pan, nestling them into the sauce. Bring the mixture to a simmer.

Step 9

Cover the pan with a lid and reduce the heat to low. Simmer for 35-40 minutes, flipping the meat halfway through, until the sauce thickens and the meat is tender.

Step 10

Optional: Add the green olives during the last 10 minutes of cooking for a briny kick.

Step 11

Taste and adjust seasoning with more salt and black pepper if needed.

Step 12

Sprinkle the dish with fresh parsley before serving.

Step 13

Serve hot with crusty bread, rice, or roasted vegetables.
