Ingredients

  • 400 grams Spinach (fresh)
  • 3 units Garlic cloves
  • 3 tablespoons Extra-virgin olive oil
  • 1 teaspoon Ground paprika (sweet or smoked)
  • 0.5 teaspoon Ground cumin
  • 1 tablespoon Sherry vinegar
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper (freshly ground)
  • 2 tablespoons Pine nuts (optional, toasted)

Directions

Step 1

Rinse the spinach thoroughly and pat dry with a clean kitchen towel or paper towels.

Step 2

Peel and finely slice the garlic cloves.

Step 3

In a large skillet or frying pan, heat the olive oil over medium heat.

Step 4

Add the sliced garlic to the pan and sauté for 1-2 minutes until lightly golden and fragrant. Be careful not to burn the garlic.

Step 5

Stir in the paprika and cumin, then cook for 30 seconds to release their aromas.

Step 6

Add the fresh spinach in batches, stirring frequently to wilt the leaves evenly. Once the first batch wilts down, add more spinach until all 400 grams are in the pan.

Step 7

Season the spinach with salt and black pepper. Stir well to combine.

Step 8

Drizzle with the sherry vinegar and cook for an additional 1-2 minutes, allowing the flavors to meld together.

Step 9

If using pine nuts, sprinkle them on top as a garnish before serving.

Step 10

Serve warm as a side dish or a light main course with crusty bread.
