Ingredients

  • 200 g chorizo sausage
  • 300 g potatoes
  • 6 large eggs
  • 1 medium onion
  • 100 g cheddar cheese
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp parsley

Directions

Step 1

Peel and thinly slice the potatoes. Cut the onion into thin slices as well.

Step 2

Heat 1 tablespoon of olive oil in a non-stick frying pan over medium heat. Add the potatoes and onions, and cook, stirring frequently, for 10-12 minutes until softened. Remove from the pan and set aside.

Step 3

Slice the chorizo sausage into small pieces. In the same pan, add the remaining olive oil and fry the chorizo for 3-4 minutes until lightly browned. Remove from the pan and set aside.

Step 4

In a large mixing bowl, crack the eggs and whisk them together. Add the cooked potatoes, onions, and chorizo. Season with paprika, salt, and black pepper. Mix well.

Step 5

Grate the cheddar cheese and stir it into the egg mixture.

Step 6

Return the frying pan to medium heat. Pour the egg mixture into the pan, spreading it out evenly with a spatula.

Step 7

Reduce the heat to low and cook the tortilla for 8-10 minutes, or until the bottom is set and the edges are starting to pull away from the pan.

Step 8

Using a large plate, carefully flip the tortilla onto the plate, then slide it back into the pan to cook the other side. Cook for another 5 minutes until golden brown and fully set.

Remove the tortilla from the pan and let it cool slightly before slicing it into wedges.

Garnish with freshly chopped parsley and serve warm or at room temperature.
