Ingredients

  • 6 large eggs
  • 2 medium potatoes
  • 1 medium onion
  • 1 medium red bell pepper
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley

Directions

Step 1

Peel the potatoes and cut them into small cubes (about 1/2-inch). Dice the onion and red bell pepper into small pieces. Mince the garlic.

Step 2

Heat 1 tablespoon of olive oil in a large nonstick skillet over medium heat. Add the potatoes and cook for 8-10 minutes, stirring occasionally, until they are golden and cooked through. Transfer the potatoes to a plate and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the diced onion, red bell pepper, and minced garlic. Cook for 5-7 minutes or until the vegetables are soft and slightly caramelized.
