  • 3 cups chicken or vegetable broth

  • 1 teaspoon smoked paprika
  • 0.5 teaspoons chili powder
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh cilantro, chopped (optional garnish)

Directions

Step 1

Rinse the rice in a fine mesh strainer under cold water to remove excess starch and set aside to drain.

In a large skillet or saucepan with a lid, heat the olive oil over medium heat.

Add the chopped onion and cook for 2-3 minutes until it begins to soften.

Stir in the minced garlic and diced bell pepper and sauté for another 2 minutes until fragrant and slightly softened.
