  • 1 lb Ground beef
  • 0.5 lb Ground pork
  • 0.5 cup Breadcrumbs
  • 1 Egg
  • 2 cloves Garlic, minced
  • 1 tsp Paprika
  • 1 tsp Ground cumin
  • 1.5 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil
  • 1 medium White onion, finely chopped
  • 1 medium Green bell pepper, diced
  • 14.5 oz Canned diced tomatoes
  • 2 cups Chicken broth
  • 2 tbsp Tomato paste
  • 1 cup White rice
  • 1 tsp Chili powder
  • 0.5 tsp Oregano
  • 2 tbsp Fresh cilantro, chopped

Directions

Step 1

In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, egg, 1 minced garlic clove, 0.5 tsp paprika, 0.5 tsp ground cumin, 0.5 tsp salt, and 0.25 tsp black pepper. Mix well until thoroughly combined.

Step 2

Roll the meat mixture into small, even-sized meatballs, approximately 1 inch in diameter. Set aside on a plate.

Step 3

Heat 1 tbsp of olive oil in a large, deep skillet over medium-high heat. Add the meatballs in batches and cook until browned on all sides, about 5 minutes. Remove the meatballs and set aside.

In the same skillet, add the remaining 1 tbsp olive oil. Sauté the onion and green bell pepper for 3-4 minutes, or until softened.

Return the browned meatballs to the skillet, gently nestling them into the liquid and rice mixture. Bring the mixture to a gentle simmer.

Reduce the heat to low, cover the skillet with a lid, and let it simmer for 25-30 minutes, or until the rice is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.
