Ingredients

  • 4 medium (about 1 lb) Russet potatoes
  • 4 tablespoons Olive oil
  • 2 teaspoons Smoked paprika
  • 3 cloves Garlic
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons (chopped) Fresh parsley
  • 0.25 teaspoon Red pepper flakes (optional)

Directions

Step 1

Peel the potatoes and cut them into bite-sized cubes, about 1 inch in size.

Step 2

Bring a large pot of salted water to a boil. Add the potato cubes and cook for 5-6 minutes until slightly tender but not fully cooked. Drain the potatoes and pat them dry with a clean kitchen towel.

In a large frying pan or skillet, heat 2 tablespoons of olive oil over medium-high heat.
