Ingredients

  • 500 grams potatoes
  • 1 medium onion
  • 6 whole eggs
  • 125 ml olive oil
  • 1 teaspoon salt

Directions

Step 1

Peel the potatoes and cut them into thin slices, approximately 1/8-inch thick.

Peel and finely slice the onion.

Step 3

In a large frying pan, heat the olive oil over medium heat. Add the sliced potatoes and onion, and sprinkle with salt.

Cook the potatoes and onions gently over medium heat, stirring occasionally, until the potatoes are tender but not browned. This should take about 15 minutes.

Meanwhile, in a large bowl, beat the eggs with a pinch of salt until smooth.

Once the potatoes and onions are cooked, drain them from the oil, reserving the oil for later use. Allow them to cool slightly.

Add the potatoes and onions to the beaten eggs and mix gently to combine.

In the same frying pan, add back about 2 tablespoons of the reserved olive oil and heat it over medium heat.
