  • 3 tablespoons Olive oil
  • 1 medium Yellow onion, diced
  • 3 pieces Garlic cloves, minced
  • 14 ounces Diced tomatoes, canned
  • 0.5 cup Chicken broth
  • 0.5 teaspoon Ground cumin
  • 0.25 teaspoon Red pepper flakes
  • 1 pound Baby potatoes, halved
  • 2 tablespoons Fresh parsley, chopped
  • 1 pound Green beans, trimmed
  • 1 tablespoon Unsalted butter

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pat the pork chops dry with paper towels. Season both sides with salt, black pepper, smoked paprika, and garlic powder.

Step 3

Heat 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat. Sear the pork chops for 2-3 minutes per side until golden brown. Remove them from the skillet and set aside.

In the same skillet, add 1 tablespoon of olive oil and sauté the diced onion for 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1 minute.

During the last 10 minutes of cooking, blanch the green beans in a pot of boiling salted water for 2-3 minutes until tender-crisp. Drain and plunge them into an ice water bath to stop cooking. Drain again.

Heat 1 tablespoon of butter in a large skillet over medium heat. Add the green beans and sauté for 2 minutes. Season with salt to taste.
