  • 1 kg pork shoulder
  • 3 tbsp olive oil
  • 2 tsp smoked paprika

  • 400 g canned diced tomatoes
  • 250 ml chicken stock
  • 125 ml red wine
  • 2 whole bay leaves
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley

Directions

Step 1

Trim any excess fat from the pork shoulder and cut it into large, bite-sized chunks.

Step 2

In a large bowl, mix the smoked paprika, ground cumin, red pepper flakes, salt, and black pepper. Add the pork chunks to the bowl and toss well until evenly coated with the spice mixture.

Step 3

Heat 2 tablespoons of olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Sear the pork on all sides until browned, working in batches if necessary. Remove the pork and set aside.

Reduce the heat to medium and add the remaining tablespoon of olive oil to the pot. Add the diced onion and minced garlic, sautéing for 3-4 minutes until softened and fragrant.
