  • 3 cloves Garlic, minced
  • 1 medium Green bell pepper, diced
  • 2 tablespoons Tomato paste
  • 14.5 ounces Diced tomatoes, canned
  • 1 cup Beef broth
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried oregano
  • 1 leaf Bay leaf
  • 1 cup Pitted green olives, sliced
  • 0.5 cup Raisins
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 cups Cooked white rice
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large skillet or pot over medium heat.

Step 2

Add the ground beef and cook, breaking it up with a spoon, until browned and fully cooked. Drain any excess fat and transfer the beef to a plate.

Step 3

In the same skillet, add the chopped onion and cook for 3-4 minutes until softened.

Step 4

Stir in the garlic and green bell pepper, cooking for an additional 2-3 minutes.

Step 5

Add the tomato paste and cook for 1-2 minutes, stirring constantly to combine with the vegetables.

Step 6

Return the cooked ground beef to the skillet, then add the diced tomatoes, beef broth, ground cumin, smoked paprika, dried oregano, and bay leaf.

Step 7

Stir the mixture well and bring it to a gentle simmer.

Step 8

Add the sliced green olives and raisins, mixing them into the stew.

Step 9

Season with salt and black pepper to taste.

Step 10

Lower the heat to medium-low and let the mixture simmer, uncovered, for about 20 minutes, stirring occasionally. Remove the bay leaf before serving.

Step 11

While the Picadillo cooks, prepare the white rice according to package instructions if it isn’t already cooked.

Step 12

Serve the Picadillo hot over a bed of white rice, garnished with fresh parsley if desired.
