Ingredients

  • 500 grams Potatoes
  • 1 medium Onion
  • 6 large Eggs
  • 100 ml Olive oil
  • 1 teaspoon Salt

Directions

Step 1

Peel the potatoes and cut them into thin slices or small cubes, about 2-3 mm thick.

Peel and finely slice the onion.

Step 3

In a large non-stick frying pan, heat the olive oil over medium heat.

Add the sliced potatoes and onions to the pan, stirring occasionally. Cook for about 15 minutes or until the potatoes are soft but not browned.

Using a slotted spoon, remove the cooked potatoes and onions from the oil and transfer them to a large bowl. Let them cool slightly.

In a separate bowl, beat the eggs with the salt until well combined.

Pour the beaten eggs over the cooled potatoes and onions, gently stirring to coat everything evenly.

Heat a little of the reserved olive oil in a clean non-stick frying pan over medium-low heat.
