  • 8 large eggs
  • 150 grams cooked chorizo, diced
  • 1 medium russet potato, diced into small cubes
  • 1 medium red bell pepper, diced
  • 1 small yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 3 tablespoons olive oil, divided
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley, chopped (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Heat 2 tablespoons of olive oil in an ovenproof skillet over medium heat. Once hot, add the diced potato and cook for 8-10 minutes, stirring occasionally, until tender and lightly browned. Transfer the potatoes to a plate and set aside.
