Ingredients

  • 500 grams green beans
  • 2 large ripe tomatoes
  • 1 small red onion

  • 2 cloves garlic cloves
  • 1 teaspoon sweet paprika (pimentón dulce)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Rinse the green beans under cold water, trim the ends, and cut them into approximately 5 cm (2-inch) pieces.

Step 2

Bring a pot of salted water to a boil. Add the green beans and cook for 4-5 minutes until tender but still slightly crisp.

Step 3

Drain the green beans and immediately transfer them to an ice bath to stop the cooking process and preserve their bright green color. Once cooled, drain and set aside.
